Beef Taco Casserole

A warm, hearty beef taco casserole with seasoned ground beef, crisp tortillas, and gooey melted cheese, slathered in zesty salsa.

  • 1 pound ground beef (80/20 lean-to-fat ratio)
  • 8 flour or corn tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the ground beef in a large skillet over medium-high heat with olive oil, seasoning with chili powder, cumin, garlic, and onion powder until browned (7-10 minutes).
  3. Layer the casserole starting with a layer of tortillas in a greased dish.
  4. Add half of the cooked beef, followed by salsa and a third of the cheese.
  5. Repeat layers with another set of tortillas, the remaining beef, more salsa, and another third of cheese.
  6. Finish with a final layer of tortillas, salsa, and cheese.
  7. Bake covered with foil for 25 minutes, then uncover and bake for an additional 10-15 minutes until bubbly and golden.
  8. Cool for 10 minutes before serving.

Notes

Serve with garnishes like sour cream, fresh cilantro, diced tomatoes, or avocado.
