Cheesy Hamburger Helper

A cozy twist on the classic Hamburger Helper filled with cheesy goodness and hearty flavors.

Ingredients

  • 500 g ground beef
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced, optional)
  • 2 ½ cups elbow macaroni (uncooked)
  • 3 cups beef broth (or chicken broth)
  • 1 cup milk
  • 1 ½ cups shredded cheddar cheese
  • 1 tablespoon tomato paste (or 2 tbsp ketchup)
  • 1 teaspoon paprika
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon oil or butter
  • ½ teaspoon chili flakes (optional)
  • 1 teaspoon mustard

Instructions

  1. Sauté the Aromatics: Heat the oil or butter over medium heat, then add the onion and sauté until translucent, about 3-4 minutes.
  2. Add the Garlic: Stir in minced garlic and sauté for just a minute until fragrant.
  3. Brown the Beef: Increase heat to medium-high, add ground beef, and cook until browned, about 5-7 minutes. Season with salt, pepper, and paprika.
  4. Stir in Tomato Paste: Add tomato paste (or ketchup) and mix well to coat the beef.
  5. Combine the Pasta and Broth: Add uncooked pasta and beef broth, stir, bring to a simmer, cover, and cook for 8-10 minutes or until pasta is tender.
  6. Add Milk and Cheese: Remove from heat, stir in milk and shredded cheddar cheese until melted and creamy.
  7. Season to Taste: Taste and adjust seasoning with more salt, pepper, or chili flakes if desired.
  8. Serve it Up: Ladle into bowls, garnish with extra cheese or fresh herbs if desired.

Notes

For a lighter version, substitute ground beef with ground turkey or chicken. Feel free to include vegetables like spinach or bell peppers for added nutrition.
