Sweet & Tangy Cranberry Chicken

A cozy home-cooked dish featuring tender chicken thighs simmered in a sweet and tangy cranberry sauce.

  • 4 chicken thighs, skin-on and bone-in
  • 1 cup cranberry sauce
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken thighs dry with paper towels; season generously with salt and pepper.
  3. Heat a splash of olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs, skin-side down, and sear for 5-7 minutes until golden brown.
  4. Flip the chicken and sear the other side until golden.
  5. Remove the chicken from the skillet, and add the cranberry sauce and a sprig of rosemary to the leftover drippings; stir and scrape up any brown bits.
  6. Return the chicken to the skillet, skin-side up, and nestle into the sauce.
  7. Bake in the preheated oven for 30-35 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Let the chicken rest for a few minutes before serving; garnish with additional rosemary.

Notes

Serve over rice or mashed potatoes for a complete meal. This dish can be customized with spices or ingredients like bacon for added flavor.
