Cranberry Chicken

A heartwarming dish of chicken thighs simmered in a luscious cranberry sauce with fresh rosemary, perfect for any gathering.

  • 4 Chicken Thighs (bone-in, skin-on)
  • 1 cup Cranberry Sauce (homemade or store-bought)
  • 2 sprigs Fresh Rosemary (or 1 tsp dried rosemary)
  • 2 tablespoons Olive Oil
  • Salt to taste
  • Black Pepper to taste

Instructions

  1. Start by patting your chicken thighs dry with a paper towel and seasoning with salt and pepper.
  2. Heat about 2 tablespoons of olive oil in a large, oven-safe skillet over medium-high heat.
  3. Carefully place the chicken thighs skin side down and sear for about 5-7 minutes until golden brown.
  4. Flip the chicken over and sear the other side for about 3 minutes before adding fresh rosemary and pouring the cranberry sauce over the chicken.
  5. Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
  6. Spoon some sauce over the chicken halfway through baking, then allow to rest for 5 minutes before serving.

Notes

For added flavor, consider using seasoned salt or garlic powder. Pair with mashed potatoes or roasted veggies.
