Ultimate Chicken Gnocchi Skillet

A cozy Chicken Gnocchi Skillet packed with crispy chicken, pillowy gnocchi, and vibrant spinach, all simmered in a luscious cream sauce.

  • 1 lb Boneless, skinless chicken breast
  • 16 oz Gnocchi
  • 2 cups Fresh spinach
  • 1 cup Heavy cream
  • 3 cloves Garlic, minced
  • 1 cup Chicken broth
  • ½ cup Grated Parmesan cheese
  • 2 tbsp Olive oil

Instructions

  1. Heat your skillet: Place a large skillet over medium heat, drizzle in about 2 tablespoons of olive oil, and allow it to warm up.
  2. Season the chicken: While the oil is heating, season your chicken breasts with salt and pepper.
  3. Brown the chicken: Once the oil is shimmering, add the seasoned chicken to the skillet. Cook for about 6-7 minutes on each side, or until golden brown and cooked through.
  4. Remove and rest: Transfer the cooked chicken to a plate and let it rest for a few moments.
  5. Add garlic: In the same skillet, add a little more olive oil if needed and toss in minced garlic. Sauté for about 30 seconds or until fragrant.
  6. Pour in the chicken broth: Deglaze the skillet by pouring in 1 cup of chicken broth.
  7. Add cream: Pour in 1 cup of heavy cream and let it simmer for a few minutes until the sauce thickens slightly.
  8. Introduce gnocchi: Add the gnocchi to the simmering sauce and let them cook for about 3-4 minutes until they begin to float to the surface.
  9. Add spinach: Toss in 2 cups of fresh spinach and fold everything together gently.
  10. Return the chicken: Slice the rested chicken into strips, return it to the skillet, and stir to combine.
  11. Finish with Parmesan: Sprinkle in about ½ cup of grated Parmesan cheese and stir until it melts into the creamy sauce.

Notes

For a lighter dish, substitute heavy cream with half-and-half or coconut milk. Leftovers can be stored in an airtight container in the fridge for up to three days.
