1 pound Chicken Breast, cut into bite-sized pieces
1 cup Orzo Pasta
2 cups Fresh Spinach, roughly chopped
½ cup Parmesan Cheese, grated
1 cup Heavy Cream
3 cups Chicken Broth
3 cloves Garlic, minced
1 medium Onion, chopped
2 tablespoons Olive Oil
Salt and Pepper, to taste
Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sprinkle the cut chicken pieces with salt and pepper. Add them to the skillet in a single layer, cooking for about 6–7 minutes until golden brown.
Remove the chicken from the skillet and set aside. Add the remaining tablespoon of olive oil and toss in the chopped onion. Sauté for about 3 minutes until translucent.
Add the minced garlic and cook for another minute until fragrant.
Stir in the orzo and let it mingle with the onion and garlic for about a minute. Pour in the chicken broth and bring it to a gentle boil.
Cook for about 8-10 minutes for the orzo to absorb most of the broth, stirring occasionally.
Add fresh spinach, heavy cream, and Parmesan cheese. Mix until combined and creamy. Season with salt and pepper.
Return the chicken to the skillet to warm through. Remove from heat and serve hot.
Notes
For added flavor, you can experiment with fresh herbs, lemon zest, or sun-dried tomatoes.
