Creamy Garlic Sauce Baby Potatoes

Delightful roasted baby potatoes drenched in a rich and creamy garlic sauce, perfect as a side dish or a comforting main.

  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the baby potatoes.
  3. Cut the baby potatoes in half.
  4. Combine halved potatoes with olive oil, salt, and pepper in a large mixing bowl.
  5. Spread the potatoes on a baking sheet in a single layer.
  6. Roast in the preheated oven for about 25-30 minutes, flipping halfway through.
  7. Make the garlic sauce: Melt garlic in olive oil over medium heat for about 1 minute.
  8. Add the heavy cream to the sautéed garlic and bring to a gentle simmer.
  9. Stir in the grated Parmesan cheese and adjust seasoning.
  10. Pour the creamy garlic sauce over the roasted potatoes and toss gently to coat.
  11. Transfer to a serving dish and garnish with chopped fresh parsley.

Notes

For a lighter option, substitute half of the heavy cream with chicken or vegetable broth.
