Creamy Mushroom Chicken

A comforting dish featuring tender chicken enveloped in a rich, creamy mushroom sauce.

  • 4 Chicken Breasts (or Thighs)
  • 8 oz Button or Cremini Mushrooms
  • 1 cup Heavy Cream
  • 2 cloves Garlic, minced
  • 1 tsp Fresh Thyme (or 1/3 tsp dried)
  • Salt and Pepper to taste
  • 1 tbsp Olive Oil for cooking

Instructions

  1. Prep the Chicken: Pat the chicken dry using paper towels and season generously with salt and pepper on both sides.
  2. Sear the Chicken: In a large skillet over medium-high heat, add olive oil. Sear the chicken for about 5-7 minutes until golden brown, then flip and cook for another 5-6 minutes until cooked through (internal temperature should be 165°F or 75°C). Remove and cover with foil.
  3. Sauté the Mushrooms: In the same skillet, add chopped mushrooms and sauté for about 4-5 minutes until tender.
  4. Add Garlic and Thyme: Stir in minced garlic and thyme, sauté for another minute until fragrant.
  5. Make It Creamy: Lower the heat and add heavy cream. Bring to a simmer and let it thicken for about 3-5 minutes.
  6. Combine It All: Add the chicken back to the skillet, spooning sauce over each piece and simmer for another 2-3 minutes.
  7. Taste & Adjust: Taste for seasoning, adding more salt, pepper, or lemon juice as desired.
  8. Serve: Enjoy immediately over rice, mashed potatoes, or with veggies.

Notes

Experiment with different herbs or mushrooms to change the flavor profile. A splash of white wine can enhance the sauce.
