  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup whole milk
  • 1 teaspoon garlic powder

  • A pinch of nutmeg (optional)

Instructions

  1. Boil the pasta: Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until it’s al dente, about 8-10 minutes.
  2. Make the cheese sauce: While your pasta is cooking, grab a medium-sized saucepan and heat it over medium heat. Pour in your milk and bring it just to a simmer.
  3. Add the pumpkin: Once the milk is simmering, whisk in your pumpkin puree, garlic powder, salt, pepper, and nutmeg if you’re using it.
  4. Incorporate the cheese: Lower the heat and gradually stir in the cheddar and mozzarella cheeses. Keep whisking until the cheese is fully melted and the sauce is smooth.
  5. Combine pasta and sauce: Once your cheese sauce is perfectly smooth, add in the drained pasta. Stir until all the noodles are coated in that luscious sauce.
  6. Bake (optional): Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a baking dish, sprinkle some extra cheese on top, and bake for about 20 minutes or until bubbly and golden.
