Baked Feta Potatoes

A cozy baked feta potato dish that combines crispy potatoes with creamy, herbed feta for a delightful comfort food experience.

  • 1 lb Baby Potatoes
  • 8 oz Feta Cheese
  • 2 tbsp Olive Oil
  • 4 cloves Garlic
  • 1 tsp Thyme
  • 1 tsp Oregano
  • Salt and Pepper to taste
  • 2 tbsp Lemon Juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your baby potatoes by washing and cutting them in half.
  3. Season the potatoes with olive oil, minced garlic, thyme, oregano, salt, and pepper in a large mixing bowl.
  4. Arrange the seasoned potatoes in a baking dish and crumble feta on top.
  5. Bake in the oven for 30-35 minutes, stirring halfway.
  6. Finish by removing from oven and squeezing lemon juice over the top.

Notes

For extra flavor, toss in fresh parsley when serving. Serve with crusty bread to dip in the feta-infused oil.
