French Onion Chicken

A cozy, comforting dish featuring golden, caramelized onions and tender chicken breasts topped with melting Gruyère cheese.

  • 4 boneless, skinless chicken breasts
  • 2 medium sweet yellow onions, thinly sliced
  • 3 tablespoons butter
  • 1 cup Gruyère cheese, shredded
  • 1 cup beef broth (or chicken broth)
  • 1 teaspoon fresh thyme (or 1/3 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 tablespoon flour (optional)

Instructions

  1. Caramelize the onions: Melt 2 tablespoons of butter in a skillet, add onions and salt, and stir occasionally for 20–30 minutes until caramelized.
  2. Prepare the chicken: Season chicken with salt and pepper, then cook in another pan with remaining butter for 5–7 minutes on each side until golden.
  3. Create the sauce: Add caramelized onions back to the chicken pan, add broth and thyme, and simmer for 5 minutes.
  4. Assemble and bake: Preheat oven to 375°F (190°C), place chicken in a baking dish, cover with onions and broth mixture, top with Gruyère, and bake for 20–25 minutes.
  5. Enjoy! Let cool for a minute before serving.

Notes

Serve with a green salad or over mashed potatoes, and don’t forget a slice of crusty French bread for dipping.
