Garlic Butter Steak Bites and Potatoes

  • 1 lb sirloin steak (cut into bite-sized cubes)
  • 2 cups baby potatoes (halved)
  • 4 tbsp unsalted butter
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh rosemary (chopped, optional)
  • 1 tsp fresh thyme (chopped, optional)

Instructions

  1. Preheat your skillet over medium-high heat.
  2. Parboil the halved baby potatoes in boiling salted water for 10-12 minutes.
  3. Sear the cubed sirloin steak in the hot skillet for 2-3 minutes on each side.
  4. Add the unsalted butter to the skillet, then stir in the minced garlic for about 30 seconds.
  5. Mix in the steak bites and parboiled potatoes, seasoning with salt, pepper, and optional herbs.

Notes
