  • 2 medium sweet potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups spinach
  • 1 tsp cumin

  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Prepare your sweet potatoes: Peel and cube them into bite-sized pieces. Set aside.
  2. Sauté the aromatics: Heat olive oil in a skillet, add onion, sauté for 3-4 minutes, then add garlic and bell pepper, sauté for another 2-3 minutes.
  3. Cook the ground turkey: Push veggies aside, add turkey, season with salt, pepper, cumin, and paprika. Cook for 6-8 minutes until browned.
  4. Add sweet potatoes: Stir in sweet potatoes, add water, cover, and cook for 10-12 minutes.
  5. Add spinach: Once sweet potatoes are tender, stir in spinach and cook for 2-3 minutes.
  6. Taste and adjust: Check seasoning and adjust as necessary.
  7. Plating your bowl: Serve and top with avocado, salsa, or cilantro.
