Harvest Chicken Casserole

A warm and comforting casserole combining tender chicken, sweet potatoes, broccoli, and gooey cheddar cheese, perfect for fall gatherings.

  • 2 lbs Chicken (boneless, skinless thighs or breasts)
  • 2 medium Sweet Potatoes, peeled and diced
  • 2 cups Broccoli, chopped
  • 2 cups Cheddar Cheese, shredded
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • Salt and Pepper, to taste
  • 2 teaspoons Dried Herbs (thyme, rosemary, or Italian seasoning)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat some olive oil in a large skillet over medium heat. Add the seasoned chicken and sear until golden brown, about 5-7 minutes per side.
  3. Peel and dice the sweet potatoes. Boil them in water for about 5-7 minutes until tender but firm. Drain.
  4. Add chopped broccoli to the skillet and sauté for 2-3 minutes until bright green and crunchy.
  5. Combine the chicken, sweet potatoes, broccoli, garlic, and 1 to 1.5 cups of cheddar cheese in a large bowl.
  6. Grease a 9×13-inch baking dish and spread the mixture evenly. Top with remaining cheese.
  7. Bake covered with foil for 25-30 minutes, then uncover and bake for an additional 10-15 minutes until cheese is bubbly.
  8. Let cool for 5-10 minutes before serving.

Notes

Feel free to substitute the chicken with chickpeas for a vegetarian option or add spices for heat.
