Mediterranean Chicken Zucchini Bake

A vibrant and flavorful dish featuring juicy chicken, tender zucchini, and colorful vegetables, all baked together with Mediterranean spices.

  • 2 chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for drizzling
  • 1 cup feta cheese, crumbled (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Take diced chicken breasts and place them in a large mixing bowl.
  3. Add sliced zucchinis, chopped bell pepper, chopped onion, minced garlic, and halved cherry tomatoes.
  4. Sprinkle in the dried oregano and basil, and season with salt and pepper.
  5. Drizzle 2-3 tablespoons of olive oil over everything.
  6. Mix until chicken and veggies are well coated in oil and herbs.
  7. Grease a large baking dish with olive oil.
  8. Pour the chicken and vegetable mixture into the dish, spreading evenly.
  9. Pop it into the oven and bake for about 25-30 minutes.
  10. If using feta, sprinkle it over the bake during the last 5-7 minutes of cooking.
  11. Once out of the oven, let it cool for a couple of minutes before serving.

Notes

You can prepare this dish in advance and refrigerate overnight. It’s adaptable; feel free to use leftover vegetables.
