Peaches and Cream Crumble Bars

Delightful peach crumble bars that evoke the essence of summer with creamy goodness and juicy peaches.

  • 2 1/2 cups (350 g) all-purpose flour
  • 2/3 cup (140 g) granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups (280 g) cold unsalted butter, cut into small cubes
  • 1/4 cup (50 g) brown sugar, preferably dark
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (35 g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted, peeled, and chopped peaches (about 78 peaches)
  • 6 tablespoons (90 ml) heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Prep and preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Make the crust and topping by combining flour, granulated sugar, and salt in a bowl. Add cold butter and mix until crumbly, reserving 1 1/2 cups for the topping.
  3. Press the remaining mixture firmly into the bottom of the baking dish to form the crust.
  4. Bake the crust for about 15-20 minutes, or until lightly golden.
  5. Create the peach filling by mixing together granulated sugar, flour, cinnamon, and salt. Add peaches and toss to coat.
  6. Assemble the bars by spreading the peach mixture over the baked crust, drizzling with heavy cream, and sprinkling the reserved topping over the top.
  7. Bake for another 35-40 minutes until the topping is golden brown and the peaches are bubbly.
  8. Cool at room temperature for at least an hour, then refrigerate for easier cutting.

Notes

Serve warm with vanilla ice cream or whipped cream. Try variations with different fruits or nuts for a twist!
