Pumpkin Chocolate Chip Pancakes

Delicious pumpkin chocolate chip pancakes that are fluffy, warm, and perfect for a cozy breakfast.

  • 1 tsp pumpkin spice
  • 1 3/4 tbsp baking powder
  • Pinch of salt
  • 1/4 cup sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup oil or melted butter
  • 1 1/2 cups milk
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup whipped cream (optional)
  • 3 tbsp cream cheese
  • 1/4 cup confectioner sugar

Instructions

  1. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, pumpkin spice, baking powder, sugar, and salt.
  2. Whisk the wet ingredients: In another bowl, whisk the eggs, then add the pumpkin puree, milk, oil (or melted butter), and vanilla extract. Combine until smooth.
  3. Combine the dry and wet mixtures: Pour the wet mixture into the dry mixture and stir until just combined.
  4. Fold in the chocolate chips: Gently fold in the chocolate chips and reserve a few chips to sprinkle on top as you cook.
  5. Heat your skillet or griddle: Preheat over medium heat and add butter or oil.
  6. Pour the batter: Measure out about 1/4 cup of pancake batter for each pancake and pour it into the skillet.
  7. Cook until bubbly: When bubbles form, flip the pancakes and cook until golden brown.
  8. Shift to a plate: Keep warm in the oven while you repeat the process.
  9. Whip the cream: Combine cream cheese and confectioner sugar, folding in whipped cream until desired consistency is reached.
  10. Serve and enjoy: Stack pancakes, top with whipped cream, and drizzle with maple syrup.

Notes

For a healthier twist, substitute all-purpose flour with whole wheat or gluten-free flour. You can also make vegan pancakes by using flax eggs and plant-based milk.
