  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the butternut squash by peeling, cutting in half lengthwise, scooping out seeds, and slicing it into 1-inch cubes.
  3. Season the squash in a mixing bowl with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  4. Spread the seasoned squash in a single layer on a parchment-lined baking sheet.
  5. Roast for 25-30 minutes, flipping halfway through.
