Spicy Grilled Shrimp in Foil

A vibrant Mediterranean dish featuring shrimp, sausage, and fresh vegetables grilled to perfection in a foil pack.

  • 1 lb baby potatoes (cut into 1-inch chunks)
  • 2 ears corn on the cob (sliced into 2-inch rounds)
  • 1 lb large shrimp (peeled and deveined)
  • 12 oz smoked sausage (sliced into rounds)
  • 1 large yellow onion (cut into 1/2-inch thick wedges)
  • 5 cloves garlic (freshly minced)
  • 5 tbsp salted butter (melted)
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 1/2 tbsp Old Bay seasoning
  • 1/2 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • 2 lemons (cut into wedges)
  • 1/4 cup fresh parsley (finely chopped)

Instructions

  1. Preheat Your Grill: Preheat the grill to medium-high heat (400°F / 200°C).
  2. Prepare the Foil Pack: Use a large piece of heavy-duty aluminum foil.
  3. Layer the Potatoes: Place baby potatoes in the center, drizzle with melted butter, and sprinkle with salt.
  4. Add the Corn and Sausage: Arrange corn and sausage around the potatoes.
  5. Toss in Onions and Garlic: Add onion wedges on top, followed by minced garlic.
  6. Season: Sprinkle Old Bay seasoning, smoked paprika, black pepper, and squeeze one lemon over the top.
  7. Layer the Shrimp: Place shrimp on top and drizzle with the remaining melted butter.
  8. Seal the Foil Pack: Fold the sides of the foil tightly to create a packet.
  9. Grill Away!: Cook on the grill for 15-20 minutes, shaking halfway through for even cooking.
  10. Serve with a Zing!: Open the foil pack carefully, add parsley and garnish with lemon wedges before serving.

Notes

For a healthier option, use turkey sausage and omit butter. Feel free to experiment with seasoning blends.
