Sweet Potato Shepherd’s Pie

A comforting twist on a classic shepherd’s pie, featuring creamy sweet potatoes and lean ground turkey.

  • 2 large Sweet Potatoes
  • 1 lb Ground Turkey
  • 1 cup Mixed Vegetables (carrots, peas, corn)
  • 2 tbsp Butter
  • 1/4 cup Milk
  • Salt & Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the sweet potatoes: peel and chop, boil until fork-tender (15-20 minutes).
  3. Cook the ground turkey in a large skillet with butter until browned (5-7 minutes).
  4. Add the mixed vegetables and cook for another 3-5 minutes.
  5. Season with salt and pepper.
  6. Mash the sweet potatoes with remaining butter and milk until smooth.
  7. Assemble by layering the turkey mixture in a greased baking dish and topping with mashed sweet potatoes.
  8. Bake in the oven for 20-25 minutes.
  9. Let it rest for about 10 minutes before serving.

Notes

Feel free to customize with different vegetables or proteins. Great for meal prep and leftovers freeze well.
