Taco Pasta Salad

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned or frozen)
  • 1 bell pepper, diced
  • 1 cup shredded cheese
  • 2 cups Doritos, crushed
  • 1 cup ranch dressing
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cook the pasta: Start by boiling a large pot of salted water. Add your pasta and cook according to package instructions until al dente (8-10 minutes). Save a cup of pasta water for later.
  2. Brown the meat: In a large skillet over medium heat, add your ground beef. Cook until browned and crumbled (about 5-7 minutes). Drain any excess grease.
  3. Add taco seasoning: Sprinkle the taco seasoning over your browned beef, mixing well until everything is coated. Add a splash of water if it feels too dry and let it simmer for 3-4 minutes.
  4. Prepare the veggies: Chop your bell pepper and halve the cherry tomatoes. If using frozen corn, microwave it for 2-3 minutes to defrost.
  5. Combine ingredients: In a large bowl, combine the cooked pasta, meat mixture, corn, cherry tomatoes, and diced bell pepper. Mix gently to avoid breaking the pasta.
  6. Dress it up: Pour in the ranch dressing and toss everything together. Add reserved pasta water if needed.
  7. Add cheesy crunch: Sprinkle in the shredded cheese and crumbled Doritos, gently folding them in.
  8. Garnish: Sprinkle the chopped cilantro over the top.
  9. Chill: Ideally, let it sit in the fridge for about 30 minutes before serving.

Notes

This salad keeps well in the fridge for about 3-4 days. Mix in the Doritos just before serving to maintain their crunch.
