A comforting twist on a classic favorite, this Sweet Potato Shepherd’s Pie combines savory ground turkey with a creamy sweet potato topping.

  • 1 pound Ground Turkey
  • 2 cups Mixed Vegetables (Carrots, Peas, Corn)
  • 2 large Sweet Potatoes, peeled and cubed
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by boiling them in salted water until tender, about 15-20 minutes.
  3. Mash the sweet potatoes with olive oil and salt until creamy.
  4. Cook the ground turkey in a skillet with olive oil until browned, about 7-10 minutes.
  5. Add the mixed vegetables and seasonings to the skillet, cooking for another 5 minutes.
  6. Assemble the pie by spreading the turkey mixture in a baking dish and topping it with sweet potato mash.
  7. Bake for 25-30 minutes until golden, broiling for an extra crispy top if desired.
  8. Cool for 5-10 minutes before serving.
