Creamy Tortellini Soup: A Hug in a Bowl

  • 9 ounces cheese tortellini
  • 1 pound Italian sausage (mild or spicy)
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 6 cups vegetable or chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing until they soften and become fragrant, about 3–4 minutes.
  2. Brown the sausage: Add Italian sausage to the pot and break it into bite-sized pieces. Cook for 5–7 minutes until browned.
  3. Add the broth: Pour in vegetable or chicken broth and bring to a gentle boil, scraping the bottom of the pot for flavor.
  4. Incorporate the tortellini: Add cheese tortellini and reduce heat to simmer. Cook according to package instructions, about 3–5 minutes.
  5. In with the spinach: Stir in fresh spinach and let it wilt for a couple of minutes.
  6. Pour in the heavy cream: Stir until combined and let simmer for a few more minutes.
  7. Taste and season: Adjust with salt and pepper as needed.

Notes

For a vegetarian version, substitute the sausage with sautéed mushrooms or lentils. This soup can also be frozen, but add the cream when reheating.
