Balsamic Pot Roast

A comforting Balsamic Pot Roast braised in a rich sauce with carrots, perfect for family dinners.

Ingredients

  • Chuck Roast (3-4 pounds)
  • Carrots (4-5 medium-sized)
  • Balsamic Vinegar (1 cup)
  • Beef Broth (2 cups)
  • Garlic (4 cloves, minced)
  • Onions (1 large, diced)
  • Fresh Thyme (1 tablespoon, chopped)
  • Olive Oil (2 tablespoons)
  • Salt and Pepper (to taste)

Instructions

  1. Prep the ingredients by dicing onions, mincing garlic, and slicing carrots.
  2. Sear the chuck roast in olive oil until browned on all sides.
  3. Sauté onions in the same pot until translucent, then add garlic.
  4. Deglaze with balsamic vinegar, scraping up brown bits.
  5. Combine broth, carrots, thyme, and roast back in the pot.
  6. Bring to a simmer, cover, and reduce heat to low.
  7. Let cook for 3-4 hours until fork-tender.
  8. Serve with caramelized carrots and drizzle with sauce.

Notes

Serve with creamy mashed potatoes or crusty bread to soak up the sauce. Garnish with fresh herbs for extra flavor.
