Beef & Butternut Squash Chili

A delicious and hearty chili featuring ground beef, butternut squash, and a rich blend of spices, perfect for warming you up on a chilly day.

  • 1 pound Ground Beef
  • 2 cups Butternut Squash, diced
  • 1 can Black Beans, drained and rinsed
  • 1 can Kidney Beans, drained and rinsed
  • 1 can (14.5 oz) Fire-Roasted Diced Tomatoes
  • 1 Onion, diced
  • 34 cloves Garlic, minced
  • 2 tablespoons Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • Optional: Cayenne pepper to taste
  • 34 cups Beef or Vegetable Broth
  • Olive Oil for sautéing

Instructions

  1. Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 5-7 minutes until softened. Add minced garlic and sauté for an additional minute.
  2. Brown the beef: Push veggies to the side and add ground beef, cooking until browned and no longer pink.
  3. Add spices: Sprinkle in chili powder, cumin, and smoked paprika. Stir for 1-2 minutes to toast the spices.
  4. Introduce the butternut squash and tomatoes: Stir in diced butternut squash and fire-roasted diced tomatoes with juices.
  5. Mix in beans: Add drained black beans and kidney beans, stirring to incorporate.
  6. Simmer to perfection: Pour in broth, bring to boil, then reduce heat and simmer for 30-40 minutes.
  7. Check for texture: Ensure squash is tender but not mushy. Adjust seasoning as needed.
  8. Serve: Ladle chili into bowls and top with sour cream, cilantro, lime, and serve with cornbread or tortilla chips.
