One Pot Cheesy Cajun Beef Rice

A comforting and flavorful one-pot dish featuring savory ground beef, rice, and a blend of Cajun spices, all topped with melted cheese.

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Cajun seasoning
  • 1 cup shredded cheese
  • ¼ cup mayonnaise
  • 1 tablespoon hot sauce
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Make sure all your ingredients are chopped and ready to go.
  2. Brown the beef: In a large pot over medium heat, add your ground beef. Cook until browned and fully cooked through (about 5-7 minutes), seasoning lightly with salt and pepper.
  3. Add the vegetables: Toss in the onion, bell pepper, and garlic. Sauté for about 3-4 minutes until the onions are translucent.
  4. Stir in the rice and seasonings: Add your rice and Cajun seasoning to the pot, mixing thoroughly and cooking for about a minute.
  5. Pour in the broth: Add the beef broth, stir, and bring to a gentle boil.
  6. Simmer and thicken: Reduce the heat to low, cover, and let it simmer for about 20 minutes or until the rice is tender.
  7. The cheesy finale: Remove from heat and stir in the mayonnaise and shredded cheese until melted.

Notes

For variations, consider swapping the ground beef with black beans for a vegetarian option or adding shrimp for a seafood twist. Adjust the spice level according to your preference.
