Creamy Corn Chowder

A heartwarming bowl of creamy corn chowder, packed with sweet corn, fluffy potatoes, and crispy bacon, perfect for chilly evenings.

  • 4 cups Fresh Corn, preferably off the cob
  • 2 large Potatoes, Yukon Gold or russet
  • 6 strips Bacon, diced
  • 1 cup Heavy Cream
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable or Chicken Broth
  • Salt and Pepper, to taste
  • Chives or parsley, for garnish

Instructions

  1. Prepare Your Ingredients by gathering all your ingredients, dicing the bacon, chopping the onion, mincing the garlic, and peeling and cubing the potatoes.
  2. Cook the Bacon in a large pot over medium heat until crispy, about 6-8 minutes. Remove bacon and drain on paper towel, leaving about 2 tablespoons of grease in the pot.
  3. Sauté the Aromatics by tossing the chopped onion into the bacon grease, sautéing until translucent. Add minced garlic and sauté for 1 minute.
  4. Add the Potatoes, pouring in the vegetable or chicken broth, bringing it to a boil, then reducing to simmer. Cover and let cook for about 15 minutes, until potatoes are tender.
  5. Incorporate the Corn, stirring fresh corn into the pot and letting it simmer for another 5-7 minutes.
  6. Blend to Creaminess using an immersion blender, pureeing part of the soup while keeping some chunks intact for texture.
  7. Stir in the Cream, letting everything combine beautifully while seasoning with salt and pepper to taste, simmering for an extra minute.
  8. Serve and Garnish the chowder in bowls, sprinkling with crispy bacon and fresh chives or parsley, alongside warm, crusty bread.

Notes

This chowder tastes even better the next day as the flavors meld. Store in an airtight container in the fridge and reheat gently.
