The Ultimate Orzo Salad

A vibrant and refreshing orzo salad perfect for any occasion, packed with seasonal veggies and tossed in a tangy dressing.

  • 1 cup orzo pasta
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the orzo: Bring a pot of salted water to a boil. Add the orzo pasta and cook according to package instructions (about 8-10 minutes). Drain and rinse under cold water.
  2. Prepare the veggies: Dice the bell pepper, cucumber, and halved cherry tomatoes, and chop the red onion and parsley.
  3. Mix everything together: In a large bowl, combine the cooled orzo with chopped vegetables and feta, tossing gently.
  4. Dress the salad: Drizzle olive oil and red wine vinegar, tossing to coat. Season with salt and pepper to taste.
  5. Chill and serve: Let the salad sit in the refrigerator for at least 30 minutes, or serve immediately.
