Cozy Orzo Soup

A heartwarming soup filled with orzo, fresh vegetables, and comforting flavors, perfect for chilly days.

  • 1 tablespoon extra virgin olive oil
  • 1 medium-sized onion, diced
  • 1 large carrot, diced
  • 1 large celery rib, diced
  • 1 garlic clove, minced
  • ½ teaspoon dried basil or dried thyme
  • 2 teaspoons flour
  • 4 cups (960 ml) low-sodium vegetable broth
  • 1 ¼ teaspoon salt
  • 1 cup (165 grams) orzo pasta
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat the extra virgin olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until the veggies are tender and the onion is translucent.
  2. Stir in the minced garlic and your choice of dried basil or thyme. Cook for an additional minute until the garlic becomes fragrant.
  3. Sprinkle the flour over the veggies, stirring to coat them evenly. Cook for another minute.
  4. Add the low-sodium vegetable broth gradually while stirring. Bring the mixture to a gentle simmer.
  5. Sprinkle in the salt and let the soup simmer for about 5 minutes. Adjust seasoning to taste.
  6. Add the orzo pasta and cook according to the package instructions, usually about 8-10 minutes.
  7. Remove from heat and stir in the fresh chopped parsley.

Notes

Serve hot with a drizzle of olive oil and fresh herbs. Perfect with crusty bread!
