Patriotic Ice Cream Sandwiches

Delightful ice cream sandwiches made with soft cookies and creamy vanilla ice cream, perfect for summer celebrations.

Ingredients

  • Cookies (Chocolate Chip or Sugar Cookies)
  • Vanilla Ice Cream
  • Red and Blue Sprinkles or Fruits (Strawberries and Blueberries)
  • Whipped Cream (Optional)

Instructions

  1. Prepare your cookies: If you’re using homemade cookies, make your dough according to the recipe and bake them until they’re golden brown and slightly underdone, about 9-11 minutes. If using store-bought cookies, simply take them out of the packaging.
  2. Scoop the ice cream: Once your cookies are completely cool, it’s time to scoop out the ice cream. Using an ice cream scoop, grab a generous scoop and place it on the flat side of one cookie.
  3. Sandwich it together: Gently press another cookie on top of the ice cream. Don’t squish too hard; you want a delightful, thick sandwich!
  4. Serve and enjoy!: Once your sandwiches are put together, you can either enjoy them immediately or wrap them in plastic wrap and place them in the freezer for later.
