Pineapple Bread

A delightful and easy-to-make bread that combines sweet crushed pineapple with warm bread, perfect for breakfast, brunch, or as a snack.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 1 teaspoon vanilla extract
  • 1 can (8 oz) crushed pineapple with juice (do not drain)
  • Optional: 1/2 cup shredded coconut or chopped nuts (like walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with butter or non-stick spray.
  3. Whisk together the all-purpose flour, baking powder, and salt in a large mixing bowl.
  4. Beat the eggs in another bowl and add the sugar, vegetable oil, and vanilla extract. Whisk until combined.
  5. Fold in the crushed pineapple with juice into the wet ingredients.
  6. Pour the wet mixture into the dry ingredients and gently stir until just combined.
  7. Add your optional ingredients if using.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Pairs wonderfully with tea or coffee. If the top browns too quickly, cover with foil for the last 15 minutes.
