Pumpkin Sage Ravioli

A delightful dish that brings a touch of autumn to your table with creamy pumpkin and fragrant sage wrapped in fresh ravioli.

  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup finely chopped fresh sage leaves
  • Pinch of nutmeg

  • 4 tablespoons butter
  • Salt for boiling

Instructions

  1. Make the Ravioli Dough: In a large bowl, combine 2 cups of flour and a pinch of salt. Form a well in the center, add 2 eggs, and mix with a fork. Knead until smooth, wrap, and let rest for 30 minutes.
  2. Prepare the Pumpkin Filling: Combine pumpkin puree, Parmesan cheese, sage, nutmeg, salt, and pepper in a bowl. Mix until well combined.
  3. Roll Out the Dough: Divide the dough and roll it to 1/16-inch thickness. Dust with flour to prevent sticking.
  4. Cut the Ravioli Shapes: Cut the rolled dough into squares or circles, fill them with a teaspoon of filling, and seal using water.
  5. Cook the Ravioli: Boil salted water and cook the ravioli for 2-4 minutes until they float.
  6. Make the Sage Butter Sauce: Melt butter in a skillet, add sage leaves, and sauté until crispy.
  7. Combine and Serve: Transfer cooked ravioli to the skillet, toss to coat, and serve with additional cheese and crispy sage.

Notes

Feel free to substitute pumpkin with butternut squash or sweet potato for variations. Experiment with different herbs and spices for unique flavor twists.
