Quick Parmesan Baked Yellow Squash

A delightful and easy-to-make baked yellow squash dish topped with cheesy goodness, perfect for summer dinners.

  • 2 large yellow squash, cut into 1/4-inch thick rounds
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 2/3 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the yellow squash into 1/4-inch thick rounds.
  3. Toss the squash rounds with sea salt, black pepper, and garlic powder.
  4. Layer the seasoned squash in a single layer on a baking sheet lined with parchment paper and sprinkle Parmesan cheese on top.
  5. Scatter the dried oregano over the cheese.
  6. Bake for about 20-25 minutes until cheese is bubbly and golden.
  7. Serve warm right off the baking tray with fresh herbs, if desired.
