Refreshing Raspberry Mojito Cocktail

A refreshing cocktail with tart raspberries, zesty lime, and fragrant mint – perfect for summer gatherings.

  • 2 oz White Rum
  • 1 oz Lime Juice
  • 5 Fresh Mint Leaves, plus extra for garnish
  • 1 tbsp Raspberry Syrup
  • 2 Raspberries for garnish
  • 1 cup Fresh Raspberries
  • 1/2 cup Sugar

Instructions

  1. Prepare the Raspberry Syrup: In a small saucepan, combine 1 cup of fresh raspberries and 1/2 cup of sugar. Bring it to a simmer over medium heat, stirring occasionally for about 10 minutes until thick and syrupy. Let it cool.
  2. Muddle the Mint: In a sturdy glass, add the mint leaves and use the handle of a wooden spoon to press down and twist the leaves to release their oils.
  3. Add Lime Juice: Squeeze in 1 oz of fresh lime juice over the muddled mint.
  4. Mix in the Raspberry Syrup: Add 1 tablespoon of your homemade raspberry syrup into the glass with the mint and lime. Stir gently until well combined.
  5. Incorporate the White Rum: Pour in 2 oz of white rum and mix gently.
  6. Add Ice: Fill the glass with crushed ice or ice cubes, as preferred.
  7. Top with Soda Water: Fill to the brim with club soda and stir gently to mix.
  8. Garnish and Serve: Add a couple of raspberries and garnish with extra mint leaves. Serve with a straw.

Notes

For a non-alcoholic version, substitute white rum with club soda.
