Roasted Beet Salad with Walnuts, Goat Cheese, and Honey Balsamic Dressing

  • 3 bunches small to medium beets (approximately 810 beets, tops trimmed and scrubbed)
  • 3 tablespoons olive oil
  • 1/2 small red onion (thinly sliced vertically)
  • Baby salad greens (like spinach, mixed greens, or arugula)
  • 1/2 cup coarsely chopped walnuts (toasted if desired)
  • 1/2 cup crumbled goat cheese
  • 1/4 cup balsamic vinegar
  • 1/4 cup canola oil
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons honey (or to taste)
  • 1 tablespoon Dijon mustard
  • 1 clove garlic (minced)
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the beets by wrapping each individually in aluminum foil with some olive oil and salt.
  3. Roast the beets for about 45-60 minutes, until tender.
  4. Make the dressing by whisking together balsamic vinegar, canola oil, olive oil, honey, Dijon mustard, garlic, salt, and pepper.
  5. Slice the cooled beets and peel off the skins.
  6. Assemble the salad by tossing baby greens with a splash of dressing.
  7. Add in the roasted beet slices, red onion, and walnuts.
  8. Top with goat cheese and add any remaining dressing.
