Mexican Watermelon Salad

A refreshing and vibrant blend of sweet watermelon, savory Queso Fresco, fresh cilantro, and tangy lime that embodies the joy of summer.

  • 1/2 cup Queso Fresco cheese, crumbled
  • 1/3 cup fresh cilantro leaves, chopped
  • 1/2 cup clover honey
  • 1/4 cup fresh lime juice
  • 1 heaping teaspoon grated lime zest
  • 1/2 teaspoon flaky salt

Instructions

  1. Prep your watermelon by slicing it into quarters, removing the rind, and cutting it into bite-sized cubes.
  2. Toss in the crumbled Queso Fresco cheese over the watermelon cubes.
  3. Chop the fresh cilantro leaves and sprinkle them over the mixture.
  4. Make the zesty dressing by whisking together fresh lime juice, lime zest, and honey in a separate bowl.
  5. Combine the dressing with the watermelon mixture and gently toss everything together.
  6. Final touches: sprinkle flaky salt over the salad and toss gently one last time.
  7. Chill in the refrigerator for 15 to 30 minutes before serving.
