Spicy Grilled Shrimp in Foil

A vibrant, flavor-packed dish perfect for summer grilling, featuring shrimp, smoked sausage, and vegetables cooked in foil packets.

  • 1 lb baby potatoes (cut into 1-inch chunks)
  • 2 ears corn on the cob (sliced into 2-inch rounds)
  • 1 lb large shrimp (peeled and deveined)
  • 12 oz smoked sausage (sliced into rounds)
  • 1 large yellow onion (cut into 1/2-inch thick wedges)
  • 5 cloves garlic (freshly minced)
  • 5 tbsp salted butter (melted)
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 1/2 tbsp Old Bay seasoning
  • 1/2 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • 2 lemons (cut into wedges)
  • 1/4 cup fresh parsley (finely chopped)

Instructions

  1. Preheat the grill to medium-high heat (400-425°F).
  2. Prepare the foil by tearing off four large sheets.
  3. Add the potatoes to a bowl with melted butter, salt, and pepper; toss and divide among foil sheets.
  4. Layer shrimp, smoked sausage, corn, onion, garlic, and remaining melted butter over each packet.
  5. Sprinkle Old Bay seasoning and smoked paprika over each packet.
  6. Seal the packets tightly by folding the edges.
  7. Grill the packets for about 15-20 minutes.
  8. Serve with fresh lemon juice and parsley on top.

Notes

This recipe can be modified with different proteins or vegetables. Prep the foil packets ahead of time and store in the fridge until ready to grill.
