Jalapeno Peach Chicken Skewers

Sweet summer peaches, juicy chicken, and a kick of jalapeno come together in these grilled skewers for a delightful meal.

  • 2 lbs Chicken Breast, cubed
  • 2 Peaches, cut into chunks
  • 2 Jalapenos, sliced
  • 2 tbsp Olive Oil
  • 1/4 cup Peach Jam or Glaze
  • Salt and Pepper to taste
  • Wooden Skewers (soaked in water)

Instructions

  1. Soak your wooden skewers in water for at least 30 minutes.
  2. Combine cubed chicken breast, olive oil, salt, and pepper in a large mixing bowl to marinate.
  3. Prepare peaches and jalapenos by cutting them into the desired sizes; deseed jalapenos if desired.
  4. Thread the marinated chicken, peach chunks, and jalapeno slices onto the skewers, alternating them.
  5. Preheat your grill to medium-high heat (about 400°F or 200°C).
  6. Grill the skewers for 10-12 minutes, turning occasionally, until chicken is fully cooked.
  7. Brush the skewers with peach jam or glaze in the last couple of minutes to caramelize.
  8. Let the skewers rest for a couple of minutes before serving.

Notes

Try different fruits or marinades to personalize your skewers. Don’t overcrowd the skewers for even grilling.
