  • 1 cup fresh blueberries
  • 1/2 cup shelled pistachios
  • 1/4 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the greens by washing them thoroughly and drying them.
  2. Add the blueberries gently on top of the greens in the mixing bowl.
  3. Incorporate the shelled pistachios, roughly chopped.
  4. Crumble the feta cheese over the salad.
  5. Toss in the sliced red onion.
