Delicious and wholesome Strawberry Cashew Oat Bars, perfect for breakfast or a snack, packed with oats, cashews, and strawberries.

  • 1 ½ cups rolled oats
  • 1 cup raw cashews
  • ½ cup creamy cashew butter
  • ¼ cup pure maple syrup
  • ¼ cup Medjool dates (about 3-4, pitted)
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 cup freeze-dried strawberries, crushed
  • ¼ cup white chocolate chips
  • 1 tsp coconut oil
  • Extra freeze-dried strawberries (for topping)

Instructions

  1. Prep the Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch (20×20 cm) baking dish with parchment paper, allowing some edges to hang over.
  2. Blend the Cashews: In a food processor, add the raw cashews and pulse until roughly chopped.
  3. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped cashews, crushed freeze-dried strawberries, and salt.
  4. Combine the Wet Ingredients: In a separate bowl, mix together the creamy cashew butter, maple syrup, Medjool dates, and vanilla extract.
  5. Bring It All Together: Pour the wet ingredients into the bowl with the dry ingredients and mix well.
  6. Press into the Pan: Transfer the mixture to your prepared baking dish and press it down firmly.
  7. Bake: Pop the pan into the preheated oven and bake for about 20-25 minutes.
  8. Let It Cool: Allow the bars to cool in the pan for about 10 minutes before lifting them out to cool completely.
  9. Drizzle the White Chocolate: Melt white chocolate with coconut oil in the microwave and drizzle over the cooled bars.
  10. Slice and Serve: Slice the bars into squares or rectangles and garnish with extra crushed freeze-dried strawberries.

Notes

These bars can be stored in an airtight container in the fridge for about a week or frozen for up to 3 months.
