Strawberry Tiramisu

A delightful twist on the classic Italian tiramisu with luscious strawberries, rich mascarpone, and airy ladyfingers, perfect for summer.

  • 2 cups strawberries, hulled and sliced
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong coffee, cooled
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. Hull and slice the strawberries, then sprinkle with sugar and let sit for 10 minutes to extract juice.
  2. Whip the heavy cream in a large bowl until soft peaks form.
  3. Combine mascarpone cheese, sugar, and vanilla extract until smooth.
  4. Fold the whipped cream into the mascarpone mixture gently.
  5. Brew a cup of strong coffee and let it cool completely.
  6. Soak each ladyfinger in the cooled coffee quickly.
  7. Layer half of the soaked ladyfingers in a dish, add half of the mascarpone mixture, and half of the strawberries. Repeat layers.
  8. Chill the dish in the refrigerator for at least 4 hours or overnight.
  9. Dust with cocoa powder before serving and garnish with additional strawberries if desired.

Notes

For a vegan option, use coconut cream and dairy-free mascarpone. This dessert tastes even better the next day as flavors meld.
