Summer Berry Poke Cake

A delightful and refreshing poke cake bursting with summer berry flavors, perfect for gatherings.

  • 1 box yellow cake mix
  • 3 large eggs
  • 1 cup water
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup sweetened condensed milk
  • 1 cup whipped topping
  • Fresh berries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Combine the yellow cake mix, eggs, and water in a large mixing bowl.
  3. Pour your batter into the prepared baking dish and bake according to package instructions (25-30 minutes).
  4. Let it cool for about 15 minutes and then poke holes in the cake.
  5. Prepare the berry syrup by combining mixed berries and sweetened condensed milk in a saucepan over medium heat.
  6. Pour the warm berry mixture over the poked cake.
  7. Chill the cake for at least 2 hours or overnight.
  8. Spread the whipped topping over the cake and garnish with fresh berries.

Notes

For a lighter option, use heavy cream instead of whipped topping. You can also try using different fruits or adding lemon zest for extra flavor.
