Award-Winning Chilled Peach Soup

A refreshing chilled peach soup that captures the essence of summer with vibrant flavors, perfect as a light appetizer.

  • 56 medium-sized ripe peaches
  • 1/2 cup coarsely chopped cucumbers (seeded)
  • 1/4 teaspoon salt
  • 2 teaspoons white balsamic vinegar
  • 10 leaves fresh mint
  • 2 teaspoons honey
  • 2/3 cup plain Greek yogurt

Instructions

  1. Prep those peaches: Start by washing your peaches thoroughly. Slice around the peach to find the pit, twist gently to separate halves, and remove the pit. Chop the peaches into chunks.
  2. Chop the cucumber: Cut your cucumber lengthwise, scoop out the seeds, and dice into small pieces.
  3. Mint is magical: Rinse your mint leaves, stack them, roll up and slice thinly.
  4. Blend it all together: In a blender, combine peaches, cucumber, salt, vinegar, honey, and half the mint. Blend until smooth.
  5. Add yogurt: Add Greek yogurt and blend until combined.
  6. Taste and adjust: Taste the soup and adjust with salt, honey, or vinegar as desired.
  7. Chill out: Pour into a bowl, cover, and chill in the refrigerator for at least an hour.

Notes

For serving, garnish with remaining mint leaves and a dollop of Greek yogurt. Pairs well with crusty bread.
