Strawberry Gazpacho

A refreshing chilled soup made with strawberries, cucumber, and bell pepper, perfect for summer.

Ingredients

  • 1 lb. fresh strawberries, hulled
  • 1 medium cucumber, peeled and cut into chunks (1½ cups)
  • 1 medium tomato, cut into chunks (1 cup)
  • 1 medium red bell pepper, cut into chunks (1 cup)
  • ½ of an onion, chopped (¼ cup)
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon white balsamic vinegar
  • ¼ to ½ cup low-sodium vegetable broth
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional garnishes: sliced fresh strawberries, cucumber slices, and fresh herbs

Instructions

  1. Prep your ingredients by gathering all your fruits and veggies and washing them thoroughly.
  2. Hulled strawberries by removing the green tops and slicing them in half.
  3. Chop your cucumber, tomato, red bell pepper, onion, and garlic into even pieces.
  4. Add your chopped ingredients into a blender along with hulled strawberries, lemon juice, and white balsamic vinegar.
  5. Blend on high until smooth, adjusting the vegetable broth for desired consistency.
  6. Taste test and adjust seasoning as needed.
  7. Chill the gazpacho in the refrigerator for at least an hour before serving.
  8. Serve the gazpacho garnished with sliced strawberries, cucumbers, and herbs.

Notes

Letting the gazpacho chill allows the flavors to marry for a more delicious taste.
