Instructions

  1. Prepare the Watermelon: Cut the watermelon into small chunks; triangles work beautifully visually, but I prefer them bite-sized for easy munching.
  2. Juice the Limes: Use a juicer or squeeze 1/4 cup of lime juice, ensuring to remove any seeds.
  3. Chop the Mint Leaves: Roughly chop the mint leaves to release their aroma.
  4. Combine Ingredients: In a large bowl, combine the watermelon, lime juice, mint, salt, and cayenne pepper. Toss gently to coat.
  5. Taste Test: Adjust salt or cayenne pepper to your preference, adding more lime if desired.
  6. Chill Time: Let it chill in the refrigerator for about 30 minutes before serving.
  7. Serve and Enjoy: Toss again before serving and garnish with extra mint or lime zest if desired.

Notes

For the best flavor, prepare a few hours in advance but add mint just before serving to keep it fresh.
