  • 2 tablespoons olive oil (divided)

  • 1 pound ground turkey
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 2 cups fresh spinach (chopped)
  • 1 cup shredded cheese (cheddar works well)
  • To taste fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the butternut squash by peeling and cubing it.
  3. Season the squash with olive oil, salt, and pepper.
  4. Roast the squash for about 25-30 minutes until tender.
  5. Cook the ground turkey in a skillet with olive oil and diced onion.
  6. Add garlic, cumin, smoked paprika, and thyme; cook for 1 minute.
  7. Mix in the ground turkey and brown it for about 6-8 minutes.
  8. Incorporate the spinach and stir until wilted.
  9. Combine roasted squash into the turkey mixture.
  10. Add shredded cheese and fold it in gently.
