Turkey Meatball Soup

A comforting bowl of Turkey Meatball Soup filled with herbs, fresh vegetables, and savory turkey meatballs in hearty broth.

  • 1 lb Ground Turkey
  • 1 cup Breadcrumbs
  • 1 Egg
  • 2 cloves Garlic, minced
  • 1 Onion, diced
  • 1 handful Fresh Parsley, chopped
  • Salt, to taste
  • Pepper, to taste
  • 1 tbsp Olive Oil
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 Zucchini, diced
  • 6 cups Broth (chicken or vegetable)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare your veggies.
  2. Combine ground turkey, breadcrumbs, egg, minced garlic, parsley, salt, and pepper in a bowl.
  3. Roll the mixture into bite-sized meatballs, about an inch in diameter.
  4. Bake for about 20 minutes until golden brown.
  5. Heat olive oil in a large pot over medium heat and sauté onions, carrots, and celery for 5-7 minutes.
  6. Add the zucchini and cook for another 2 minutes.
  7. Pour in the broth and bring to a gentle boil.
  8. Combine the baked meatballs with the soup and simmer for 15-20 minutes.
  9. Serve in bowls garnished with fresh parsley.

Notes

Consider adding freshly grated Parmesan cheese or a squeeze of lemon juice before serving. You can adjust seasonings to taste.
