Creamy Mushroom Chicken

A comforting classic featuring succulent chicken in a rich, creamy mushroom sauce, perfect for weeknight dinners or special occasions.

  • 2 Chicken Breasts or Thighs
  • 8 oz Cremini or Button Mushrooms, sliced
  • 1 cup Heavy Cream
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh Thyme (or 1 teaspoon dried)
  • 1 tablespoon Olive Oil
  • 1 tablespoon Butter
  • Salt and Pepper, to taste

Instructions

  1. Prep your ingredients: Gather all your ingredients, slice the mushrooms, and chop the garlic finely. Season the chicken with salt and pepper.
  2. Sear the chicken: In a large skillet over medium-high heat, add olive oil and butter. Add chicken and sear for 5-6 minutes on each side until golden and cooked through.
  3. Remove and rest: Transfer the chicken to a plate and let it rest to ensure juiciness.
  4. Cook the mushrooms: In the same skillet, add more butter if needed, and sauté the sliced mushrooms for about 5 minutes until golden. Add minced garlic and cook for an additional minute.
  5. Make the sauce: Pour in the heavy cream, scraping any bits from the bottom. Stir in fresh thyme and let it simmer for 3-4 minutes until slightly thickened.
  6. Combine chicken and sauce: Return the chicken to the skillet, spoon sauce over, and heat for a minute.

Notes

Serve over rice or buttery mashed potatoes. A sprinkle of fresh thyme or parsley adds a nice touch.
