Crispy Parmesan Roasted Cauliflower

A flavorful and crunchy side dish that transforms simple cauliflower into a cheesy masterpiece.

  • 1 large head cauliflower (about 1.5 pounds / 700g)
  • 3/4 cup Parmesan cheese (75g), finely grated
  • 3 tablespoons olive oil (45ml), extra virgin
  • 1 teaspoon garlic powder (2g)
  • 1 teaspoon salt (6g)
  • 1/2 teaspoon freshly ground black pepper (1g)
  • Optional: 1/2 teaspoon smoked paprika (1g)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the cauliflower by removing the leaves and stem, then cutting it into bite-sized florets.
  3. Make the olive oil mixture by whisking together the olive oil, garlic powder, salt, pepper, and optional smoked paprika.
  4. Toss the cauliflower florets in the mixture until well coated.
  5. Arrange the florets in a single layer on a lined baking sheet.
  6. Add the grated Parmesan on top of the cauliflower and press lightly to stick.
  7. Roast in the oven for about 25-30 minutes, tossing halfway through.
  8. Cool for a few minutes before serving, optionally garnishing with more Parmesan or a squeeze of lemon juice.

Notes

For extra flavor, try adding curry powder, buffalo sauce, or fresh herbs.
