One Pan Gnocchi with Chicken and Spinach

A cozy and comforting dish combining tender gnocchi, chicken, and vibrant spinach, all cooked in one pan for a hassle-free weeknight dinner.

Ingredients

  • 1 pound gnocchi
  • 2 chicken breasts, diced
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Sauté the chicken in olive oil over medium heat for 5-7 minutes until golden.
  2. Add garlic and spinach, cooking until the spinach wilts, about 2-3 minutes.
  3. Deglaze the pan with chicken broth, scraping up any bits, then stir in heavy cream.
  4. Stir in Parmesan cheese and lemon juice until creamy.
  5. Add gnocchi and simmer for 2-3 minutes until heated through.
  6. Taste and adjust seasoning as needed.

Notes

For extra flavor, consider adding white wine when deglazing the pan or fresh herbs for garnish.
